CSA Box: September 20

This week’s box:

  • kale
  • bok choy
  • arugula
  • 3 peaches
  • 1 pepper
  • 2 ears of corn
  • 3 squash
  • herbs
  • 4 squash blossoms
  • 3 persimmons
  • 1 pumpkin

I didn’t get any a la carte items this week, but I’ve still got a few of those peppers from last week.

The total was the cost of the box, $25.

Meal plan:

  • Monday: We ended up having a few family dinners pop up on us last week, so we’re actually having the eggplant mini pizzas + arugula salad tonight.
  • Tuesday: stir fry with chicken, bok choy, peppers, and kale (and the herbs)
  • Wednesday: leftovers
  • Thursday: roasted corn, squash, and pumpkin over rice
  • Friday: wine and cheese

I’m slicing the peaches and eating those with cottage cheese for breakfast. The persimmons aren’t nearly ripe yet, but I think they’ll be part of breakfast next week (or maybe I’ll get really wild and find a dessert recipe for them).

I have no idea what to do with the squash blossoms yet. Any suggestions? Evidently, they don’t last long, so I might be having them for lunch!

I’m still saving the sweet potatoes and navy beans from last week in hopes that we’ll have soup weather soon. Wishful thinking, no doubt.
